Take Coyng᷒ and ſmyte hem ī gobet᷒ and waiſsh hem and do hem in feyre wa and wyne, and ſeeþ hem and ſkym hem. and whan þey buth isode pyke hem clene, and drawe the broth thurgh a ſtno᷑ and do the fleſsh þ᷒with ī a Poſſynet and ſtyne it.[2] and do þ᷒to vyneg᷑ and powdo᷑ of gyng᷒ and a grete ntite and ſalt af the laſt boillyng and sūe it forth.
