Chykens in hocchee.[1]

Take Chyken̄s and scald hem. take ꝑsel and sawge withoute eny oþ᷒e erbes. take garlec ā grap᷒ and stoppe the Chiken̄s ful and seeþ hem in gode broth. so þat þey may esely be boyled þ᷒inne. messe hēm ā cast þ᷒to powdo᷑ dowce.

For to boile Fesan̄t᷒. ꝑtruch᷒. Capons and Curlew᷒.

Take gode broth and do þ᷒to the Fowle. and do þ᷒to hool peꝑ and flo᷑ of canel a gode qͣntite and lat hem seeþ þwith. and messe it forth. and þ᷒ cast þ᷒on Podo᷑ dowce.
