Pygg᷒ in sawse Sawge.[1]

Take Pigg᷒ yskaldid and quar hē and seeþ hem in wa and salt, take hem and lat heme kele.[2] take ꝑsel sawge. and grynde it with brede and zolkes of ayren̄ harde ysode. temꝑ it up with vyne sū what thyk. and lay the Pyg in a vessell. and the sewe onoward and sūe it forth.

Sawse madame.

Take sawge. ꝑsel. ysope. and saūay. nces. and peer᷒,[3] garlek and Grapes. and fylle the gees þerwith. and sowe the hole þat no grece come out. and roost hem wel. and kepe the grece þͭ fallith þ᷒of. take galyntyne and grece and do in a possynet, whan the gees both rosted ynough take ā smyte hem on pecys. and þat tat[4] is withinne and do it in a possynet and put þ᷒inne wyne if it be to thyk. do þ᷒to powdo᷑ of galyngale. powdo᷑ douce and salt and boyle the sawse and dresse þͤ Gees ī disshes ā lay þͤ sowe onoward.

  1. Sawge. Sage. As several of them are to be used, these pigs must have been small.
  2. kele. Cool.
  3. Peares. Pears.
