Noumbles.
Take noumbl᷒ of Deer oþ᷒[1] of oþ᷒ beeſt ꝑboile hem kerf hem to dyce. take the ſelf broth or better. take brede and grynde with the broth. and temꝑ it[2] up with a gode qn̄tite of vyneḡ and wyne. take the oynon̄s and ꝑboyle hem. and mynce hem ſmale and do þ᷒ to. colo᷑ it with blode and do þ᷒ to powdō fort and ſalt and boyle it wele and sūe it fort[3].

Take the lire of the Deer oþ᷒ of the Roo ꝑboile it on ſmale peces. ſeeþ it wel half in wat̄ and half in wyne. take brede and bray it wiþ the ſelf broth and drawe blode þ᷒ to and lat it ſeeth to gedre wt powdo᷑ fort of gynḡ oþ᷒ of canel͞l[5]. and macys[6]. with a grete porciōn of vineḡ with Raysōns of Corānte.[7]
